I made saffron rice (Chrissy's delicious recipe), lentils with whatever the hell I wanted to throw in, pita bread, and Holly's ginger molasses cookies. The rice and lentils turned out fine, and...wait why am I even talking about anything besides the cookies?

One roommate actually said they're the best ginger cookies he's ever tasted. I heartily concur; these are what all cookies should aspire to be. Thank you, Holly! Ginger cookies are my favorite, but this is the first time I've actually made them.
I doubled the recipe - after growing up with 5 siblings I think I might actually be incapable of NOT doubling a cookie recipe. Or any recipe at all (yeah, I ate a LOT of leftovers in college). I also added a little more ginger and cinnamon because, really, can you ever have too much ginger and cinnamon?
Also, I am convinced these cookies would be phenomenal with s'mores. Obviously I must test that hypothesis - it's scientifically irresponsible not to.

I never knew you felt so strongly about cookies. I like both of those pictures. Very nice, very nice. See, I have a theory - to take a decent photo you can't only just smile, but you must be happy. The happier - the better. Tyra Banks has bastardized this brilliant idea by referring to it as smiling with ones eyes. "Not like this, like THIS!"
Those cookies look delicious! Were they the chewy or hard kind? I love ginger cookies, but only if they're chewy. Although if they're hard you can dunk them in something like coffee or tea or milk and then then are soft, so.... I guess I just like ginger cookies.
I am so glad you made and liked those cookies! I actually felt silly posting the recipe, because some people disdain anything molasses-y, so I'm really glad they were a hit with you.
And for the record, I got the recipe from someone in my knitting group in Iowa ten years ago. This is why it pays to hang out with crafty people.

If at least one of those tales includes a creepy carnival fortune teller, public nudity, and the phrase, "I promised you WHAT?!" then I AM IN.
I will second the awesomeness of these cookies. I was magically compelled to make them yesterday and they are awesome.
